Vinification & maturing :
The grapes were gathered with the hand (in perforated cases to avoid any
colouring and fermentation) and immediately pressed with low pressure.
The three varieties of grape were vinified separately and then assembled.
Alcoholic and malolactic fermentation are made in stainless tanks .
Maturing is made in thermobabbited tanks so that the wine keeps all its
aromatic freshness and promptness in mouth. At the time of the bottling,
the drawn-off liquid is added for the second fermentation. The bottle
will remain 15 months then slept for the catch of foam and the second
fermentation. A moving in considering to eliminate all the impurities
before discharging, proportioning (addition of the "liqueur d'
expedition"), stopping and "pose de muselet". Our crémant is vinified
according to the traditional method (known as in the past "
Champenoise"). Moreover, our crémant was tasted in approval tastings
(INAO) before its marketing.
Tasting
notes :
Open and pleasant nose on citrus fruits notes (grapefruit
& lemon), butter, almond with a touch of honey, mineral and white
flowers. Frank attack, a lot of freshness, very beautifully balanced,
round, harmonious and long final on fruity flavours. The bubbles are
fine.
Food
pairing : At "aperitif",
with a fruit liquor (" Kir Royal" containing blackcurrant cream,
blackberry or raspberry, bush peach). Will also accompany sauce fish or
white meats with cream. Perfect with the desserts !
